Stuffed Pesto Chicken Rolls

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup basil pesto
  • 1 cup shredded mozzarella cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup breadcrumbs
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Place each chicken breast between two sheets of plastic wrap and pound them to 1/4-inch thickness.
  3. Spread 2 tablespoons of pesto on each chicken breast.
  4. Sprinkle each with mozzarella cheese, sun-dried tomatoes, breadcrumbs, salt, and pepper.
  5. Roll up the chicken and secure with toothpicks.
  6. Heat olive oil in an oven-safe skillet over medium-high heat.
  7. Sear the chicken rolls until golden brown on all sides, about 2 minutes per side.
  8. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
  9. Remove toothpicks before serving.
