Szechuan Spicy Tofu Stir-Fry

Ingredients:

  • 1 block firm tofu, cubed
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 1 red chili, sliced
  • 1/4 cup vegetable broth
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 green onions, chopped
  • 1 tsp sesame seeds

Directions:

  1. In a bowl, mix soy sauce and sesame oil. Add cubed tofu and marinate for 15 minutes.
  2. In a wok or large skillet, heat some oil over high heat. Add garlic, ginger, and chili. Stir-fry for 1 minute.
  3. Add bell pepper and onion. Stir-fry for another 2 minutes.
  4. Push vegetables to the side, add tofu, and cook until browned on all sides.
  5. Mix vegetable broth, cornstarch, and water. Pour over the tofu and vegetables. Stir well.
  6. Cook until the sauce thickens and coats the tofu and vegetables.
