Three Delights Chinese Fried Rice

Ingredients:

  • 2 cups cooked jasmine rice
  • 1/2 cup cooked diced chicken breast
  • 1/2 cup cooked shrimp, peeled and deveined
  • 1/2 cup diced mixed vegetables (carrots, peas, bell peppers)
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon white pepper
  • 2 tablespoons vegetable oil for cooking

Directions:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and sauté until fragrant.
  3. Push garlic to the side of the skillet and pour beaten eggs into the center. Scramble the eggs until just cooked, then mix with garlic.
  4. Add diced chicken, shrimp, and mixed vegetables. Stir-fry for 2-3 minutes until heated through.
  5. Add cooked jasmine rice to the skillet. Pour soy sauce, oyster sauce, and sesame oil over the rice. Sprinkle with white pepper. Stir well to combine all ingredients.
  6. Continue to stir-fry for another 3-4 minutes until everything is heated through and well mixed.
  7. Taste and adjust seasoning if needed.
