Ingredients:
- 4 large eggs
- 2 medium tomatoes, diced
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon black pepper
- 2 green onions, chopped
Directions:
- Heat vegetable oil in a large skillet over medium heat for 2 minutes.
- Add diced tomatoes and sauté for 3-4 minutes until they start to soften.
- In a bowl, whisk together eggs, salt, sugar, and black pepper until well combined.
- Push the tomatoes to one side of the skillet and pour the egg mixture into the other side.
- Allow the eggs to sit for about 1 minute until they start to set, then gently scramble them together with the tomatoes for an additional 2-3 minutes.
- Stir in chopped green onions and cook for another minute until everything is heated through.
