Ingredients:

  • 4 large eggs
  • 2 medium tomatoes, diced
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 2 green onions, chopped

Directions:

  1. Heat vegetable oil in a large skillet over medium heat for 2 minutes.
  2. Add diced tomatoes and sauté for 3-4 minutes until they start to soften.
  3. In a bowl, whisk together eggs, salt, sugar, and black pepper until well combined.
  4. Push the tomatoes to one side of the skillet and pour the egg mixture into the other side.
  5. Allow the eggs to sit for about 1 minute until they start to set, then gently scramble them together with the tomatoes for an additional 2-3 minutes.
  6. Stir in chopped green onions and cook for another minute until everything is heated through.
