Vietnamese Banh Mi Sandwich

Ingredients:

  • 1 French baguette
  • 200g pork belly, thinly sliced
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/4 cup rice vinegar
  • 1/4 cup sugar
  • 1/4 cup mayonnaise
  • 1/4 cup sriracha sauce
  • 1 cucumber, thinly sliced
  • 1 carrot, shredded
  • 1/4 cup fresh cilantro leaves
  • Pickled daikon and radish (optional)
  • Salt and pepper to taste

Directions:

  1. In a bowl, mix soy sauce, garlic, ginger, rice vinegar, and sugar. Marinate the pork belly in this mixture for at least 30 minutes.
  2. In a hot pan, cook the marinated pork belly until browned and cooked through. Set aside.
  3. Cut the baguette into sandwich-sized lengths and slice them open horizontally.
  4. Mix mayonnaise and sriracha sauce, then spread inside the baguette.
  5. Layer the cooked pork belly, cucumber slices, shredded carrot, cilantro leaves, and pickled daikon and radish on the baguette.
  6. Season with salt and pepper to taste.
