White Chocolate Coconut Mango Cookies

These cookies are a delicious and tropical treat that is perfect for any occasion. They are made with a soft and chewy dough that is packed with white chocolate chips, coconut flakes, and dried mango pieces. The cookies are then baked until golden brown and gooey.

Ingredients:
- 1 stick butter flavored Crisco shortening
- 1 cup sugar
- 2 eggs
- 2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups white chocolate chips
- 1 cup sweetened coconut flakes
- 1/2 cup dried mango slices
Directions:
- In a small saucepan add the mango slices and cover with water cook on medium heat for 5-10 minutes to softened the mango slices.
- Remove from heat and let cool. Once the mango slices have cooled dice the mango slices and set side.
- PreHeat oven to 350 degrees. Place parchment paper onto rimmed cookie sheets.
- In the bowl of a stand mixer, cream together the shortening and sugar until light and fluffy.
- Add in eggs one at a time mixing well after each addition.
- In a separate bowl whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the flour mixture to the creamed mixture and mix on low speed until the flour is just about incorporated. Scrape down the sides of the bowl after mixing.
- Add in the white chocolate chips, coconut, and the diced mango. Mix on low speed until combine.
- Drop the dough by tablespoonfuls onto the prepared baking sheets, 12 cookies per sheet, and bake 15-18 minutes. Cool on a baking rack.
