White Chocolate Coconut Mango Cookies

These cookies are a delicious and tropical treat that is perfect for any occasion. They are made with a soft and chewy dough that is packed with white chocolate chips, coconut flakes, and dried mango pieces. The cookies are then baked until golden brown and gooey.  

White Chocolate Coconut Mango Cookies

Ingredients:

  • 1 stick butter flavored Crisco shortening
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups white chocolate chips
  • 1 cup sweetened coconut flakes
  • 1/2 cup dried mango slices

Directions:

  1. In a small saucepan add the mango slices and cover with water cook on medium heat for 5-10 minutes to softened the mango slices.
  2. Remove from heat and let cool. Once the mango slices have cooled dice the mango slices and set side.
  3. PreHeat oven to 350 degrees. Place parchment paper onto rimmed cookie sheets.
  4. In the bowl of a stand mixer, cream together the shortening and sugar until light and fluffy.
  5. Add in eggs one at a time mixing well after each addition.
  6. In a separate bowl whisk together the flour, baking soda, baking powder, and salt.
  7. Gradually add the flour mixture to the creamed mixture and mix on low speed until the flour is just about incorporated. Scrape down the sides of the bowl after mixing.
  8. Add in the white chocolate chips, coconut, and the diced mango. Mix on low speed until combine.
  9. Drop the dough by tablespoonfuls onto the prepared baking sheets, 12 cookies per sheet, and bake 15-18 minutes. Cool on a baking rack.
