Wok-Tossed Pork Pad See Ew with Chinese Broccoli

Ingredients:

  • 8 oz wide rice noodles
  • 1/2 lb pork tenderloin, thinly sliced
  • 2 cups Chinese broccoli, chopped
  • 3 cloves garlic, minced
  • 2 eggs
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp brown sugar
  • 1/2 tsp white pepper
  • 3 tbsp vegetable oil

Directions:

  1. Soak the rice noodles in hot water for 15 minutes, then drain and set aside.
  2. In a small bowl, mix together soy sauce, oyster sauce, dark soy sauce, brown sugar, and white pepper. Set aside.
  3. Heat 2 tablespoons of vegetable oil in a wok over high heat. Add minced garlic and stir-fry for 30 seconds.
  4. Add the sliced pork and stir-fry until cooked through. Push the pork to one side of the wok.
  5. Add the remaining vegetable oil to the wok and crack the eggs into the empty side. Scramble the eggs until set.
  6. Add the Chinese broccoli to the wok and stir-fry until slightly wilted.
  7. Add the soaked rice noodles and the sauce mixture to the wok. Toss everything together until well combined and heated through.
  8. Serve hot and enjoy!
