Ingredients:
- 8 oz wide rice noodles
- 1/2 lb pork tenderloin, thinly sliced
- 2 cups Chinese broccoli, chopped
- 3 cloves garlic, minced
- 2 eggs
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 1 tbsp brown sugar
- 1/2 tsp white pepper
- 3 tbsp vegetable oil
Directions:
- Soak the rice noodles in hot water for 15 minutes, then drain and set aside.
- In a small bowl, mix together soy sauce, oyster sauce, dark soy sauce, brown sugar, and white pepper. Set aside.
- Heat 2 tablespoons of vegetable oil in a wok over high heat. Add minced garlic and stir-fry for 30 seconds.
- Add the sliced pork and stir-fry until cooked through. Push the pork to one side of the wok.
- Add the remaining vegetable oil to the wok and crack the eggs into the empty side. Scramble the eggs until set.
- Add the Chinese broccoli to the wok and stir-fry until slightly wilted.
- Add the soaked rice noodles and the sauce mixture to the wok. Toss everything together until well combined and heated through.
