Classic French Macarons

Ingredients:

• 1 cup almond flour
• 1 3/4 cups powdered sugar
• 3 large egg whites, room temperature
• 1/4 cup granulated sugar
• Food coloring (optional)
• Buttercream or ganache filling

Directions:

1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
2. In a food processor, pulse almond flour and powdered sugar until well combined.
3. In a large mixing bowl, beat egg whites until foamy, then gradually add granulated sugar until stiff peaks form.
4. Gently fold in the almond flour mixture and food coloring until the batter is smooth and shiny.
5. Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheets.
6. Tap the baking sheets on the counter to release air bubbles, then let the macarons sit at room temperature for 30 minutes.
7. Bake for 15-18 minutes until set. Let cool completely before filling with buttercream or ganache.
8. Sandwich the macarons together with the filling of your choice.
